Vegan Banana Bread

Looking for a perfect healthy dessert that can also be enjoyed as breakfast? Look no further! This quick, easy and yummy banana bread will be a fantastic recipe to try whenever you feel like having something sweet and hearty.

What you’ll need:

3 Well-ripened bananas
3 dl All-purpose flour
1 dl Oats
2 tsp Baking powder
1 tbsp Cane sugar
½ tsp Flaky salt (e.g. Maldon)
½ tsp Cinnamon
½ tsp Ground cloves
½ dl Olive oil

Optional toppings:

1 Banana
½ tbsp Cane sugar

Making the Banana bread:

  1. Pre-heat the oven to 175 celcius.
  2. Peel the bananas and add them to a large mixing bowl. Mash the bananas with a fork until they’re purée like in texture.
  3. Add all the dry ingredients to the bananas and mix until everything is well combined.
  4. Lastly, add the olive oil to the bowl and mix well to form a batter. Make sure that all the dry ingredients are fully dissolved to the batter, this may take up to 4 minutes.
  5. Line a pan (I used 13 cm x 30 cm pan) with parchment paper (TIP: Scrunch the paper in your hands before putting it in the pan. This helps the paper to stay better in place).
  6. Pour the batter in to the lined pan and spread the batter evenly with the back of a spoon. OPTIONAL: Slice a banana in half and add both halves on top of the batter and sprinkle some cane sugar on top.
  7. Bake the banana bread in the oven for 35 minutes or until the top of the bread starts to get golden brown.
  8. Let the banana bread cool for 15-20 minutes before serving. ENJOY 💛
