A vegan version of the classic BLT sandwich but with a bagel twist! The inspiration for this recipe came from Riga where I saw a great looking non-vegan BLT bagel and thus, I wanted to recreate that but in a way I could also enjoy it. This recipe will be a prefect breakfast, brunch or lunch treat to try this year!
Vegan BLT Bagels 🥬🍅
4 tbsp Soy sauce
1 tsp Liquid smoke
1 tsp Spicy sriracha
1 tbsp Sugar
200 g Smoked tofu
1 tsp Oil
Lettuce leaves
Tomato slices
Green hummus (I used Baba Green Hummus)
Making the bagels:
- To make the marinade, to a bowl, mix together the soy sauce, liquid smoke, spicy sriracha and sugar. Slice the tofu to 0,5 cm thick slices and mix the marinade to the slices.
- Fry the slices in oil and the rest of the marinade from both sides until you’re left with dark brown and slightly crispy tofu slices. This takes about 10 minutes.
- Assemble the bagels by toasting the bagel halves and spreading the green hummus on either one or both halves of the bagel. Add on the salad, tomato slices and top with the tofu “bacon”. Enjoy 💚
