Vegan “Tuna” Bagels

It’s time for another bagel recipe! This bagel is inspired by an all-time-favourite of mine, a simplifies version of a vegan “tuna” salad. This recipe is a quick, easy yet filling recipe for brunches, lunches or any other occasions when you feel like having something savory and hearty.

What’s even better is that this recipe is completely customizable so if you feel like adding or removing something, you’re more than welcome to make this your own. Make sure to try the vegan “tuna” salad either on its own or as the filling of yummy bagels – however you desire!

Vegan “Tuna” salad 🥬

1 can of Rinsed chickpeas
1 tbsp Vegan mayo
½ finely diced Cucumber (seeds removed)
½ finely diced small Red onion
½ tsp Salt
½ tsp Garlic powder
1 tsp Black pepper

Caramelized Onion 🧅

1 large White onion
1 tsp Oil
1 tsp Smoked paprika
1 tsp Garlic powder
½ tsp Salt
½ tsp Chili powder

Other needed ingredients 🥯

2 whole grain bagels
1 thinly sliced Tomato

Making the “tuna” salad:

  1. Smash the chickpeas in a bowl. To the bowl, add the rest of the ingredients and mix until everything’s mixed fully together.

Making the caramelized onion:

  1. Cut the onion in half and slice the halves into thin strips. Sauté the onion in the oil and all spices until the onion turns slightly translucent. Let cool before serving.

Assembling the bagel:

  1. Cut the bagel in half and toast both halves. Put the desired amount of the “tuna” salad on to the bottom half of the bagel and spread out evently.
  2. Put slices of tomato and caramelized onion on top of the salad. Put the top half of the bagel on top and ENJOY 💚
