Creamy Pea and Basil Pasta

Creamy Pea and Basil Pesto 🌿

Big handful of fresh basil leaves
2 dl Peas (you can use fresh or defrost frozen ones)
1 dl Roasted cashews
3 dl Vegetable stock
1 tsp Salt
1 tsp Garlic powder
1 tsp Chili flakes
1 tsp Onion powder
1 tbsp Lemon juice
250 g Pasta

Making the dish:

  1. Cook the pasta according to the package instructions. NOTE! Leave the pasta a bit uncooked.
  2. In the meantime whilst the pasta is cooking, blend the rest of the ingredients for 2-3 minutes until you’re left with a smooth and silky slightly runny sauce.
  3. When the pasta has been cooked to just a bit raw, drain the pasta and transfer both the pasta and the sauce to a pot. Continue cooking the pasta in the sauce for 5-7 minutes on a medium-low heat.
  4. Let cool for 5 minutes before serving and ENJOY 💚
