The ultimate vegan fluffy pancakes with a blueberry dressing – the perfect sweet treat so serve for a Sunday brunch 🥞 To spice things up, this recipe gets a twist from lime and is thus makes the batter a bit more refreshing!

Pancakes 🥞
3 dl Flour
0,5 dl Brown sugar
2 tsp Baking powder
Pinch of salt
4 dl Oat milk
Zest of 1 lime
Juice of ½ lime
Vegan butter for frying
Blueberry syrup 🫐
1 dl Blueberries
1 tbsp Flour
0,5 dl Water
Other toppings
Agave or Maple syrup

Making the pancakes:
- Mix the dry ingredients together in a bowl. Gradually add oat milk (1 dl at the time) to the dry ingredients and mix fully together before adding more.
- Finish the batter by adding the lime juice and zest to the batter and mixing until the batter is smooth. Let the batter sit for 15 minutes and mix once before frying.
- Fry the pancakes over medium heat with some vegan butter. Serve the pancakes on a platter and add the blueberry syrup, agave/maple syrup and some lime zest on top.
Making the blueberry syrup:
- Measure all of the syrup ingredients to a sauce pan and warm over medium heat. Stir the syrup continuously for 2-3 minutes until the liquid thickens slightly. Pour the finished syrup over the pancakes and enjoy 💜
